We’re in tomato heaven right now, from tiny sprouts to gorgeous heirlooms and beyond. To celebrate a fantastic growing season, and the ones to come, we thought we’d show you one of our quickest and yummiest tomato salad. This recipe only has one laborious step: slicing your veggies. The rest is pure assembly and takes a total of 5 minutes from kitchen to table. Or should we say ‘garden to table’? Let’s get started!
TOMATO FETA SALAD RECIPE
serves 1
INGREDIENTS:
- 1 large ripe tomato
- 1/2 large cucumber
- 1/4 cup feta cheese
- 1 sprig Rosemary or garnish of choice
- 1-2 T blueberry balsamic vinaigrette
- 1 T avocado oil or olive oil
- salt & pepper to taste
STEP 1:
Slice cucumbers and tomatoes
STEP 2:
Layer the salad with cucumber on the bottom and tomato slices on top
STEP 3:
Add toppings the toppings: 1/4 cup feta cheese, 1-2 T blueberry balsamic vinaigrette, 1 T avocado oil or olive oil
STEP 4:
Add salt and pepper to taste and garnish of choice (we used Rosemary for a bit of a kick and aromatics)
